Growing up, and even in my older years, I can’t help but fawn over cookies.
I’m aware that there is a certain immature stigma surrounding these spherical bits of deliciousness, but I can’t help it, I’m hopelessly in love with cookies. And I have been for as long as I can remember.
In fact, speaking of that, I recall an early memory from my childhood that was cookie-related, but it wasn’t exactly the most “positive” story, though it does have a happy ending (eventually). I understand that’s a bit vague, so allow me to elaborate a bit.

I was in the second grade, and my class was supposed to have a Halloween party to celebrate the end of the month, and ready us, kids, for the trick-or-treating that was about to commence later that night. In celebration of this autumnal holiday, in typical elementary school fashion, a bunch of parents brought in some baked goods. The majority of them being of the cookie variety.
There were all sorts of shapes, sizes, and flavors. I was, without any hyperbole, in heaven. I was loving every single bite that I was taking, with each chomp tasting better than the one before. It was amazing.
As the kids were going crazy over these freshly baked treats, the circle of parents who brought them chit-chatted with one another near the coffee machine located behind the teacher’s desk. I happened to look over my shoulder, mid-cookie, to realize that each of these parents was holding a cup of coffee and a mysteriously shaped pastry of some sort.

I had never seen such an oblong, slightly rectangular cookie in my life before. As a child, I could care less about the coffee they were drinking, I was instantly obsessed with this never-before-seen treat. I knew, right then and there, I had to try it.
So, I ventured over to the table full of cookies that they had brought for the class. I assumed they had brought a platter full of those same cookies for us to enjoy. I must’ve just overlooked them in my excitement, I thought to myself.
I was shocked and saddened to see that no such platter existed. But that didn’t affect my motivation whatsoever. I was determined to try this bizarre cookie. So, in a very kid-like sneaky fashion, I sidled up to the teacher’s desk, where a lone, forgotten coffee-cookie was left by a parent.
I didn’t hesitate. I quickly grabbed the unknown treat, tucked it in my pocket, and fled back to my seat. When I felt like the coast was clear, I removed the baked good from my pocket and inspected it momentarily. It was incredibly hard, much denser than the standard cookie that I was used to.
Hmm, this is going to be crunchy, I thought to myself, as I took that first fateful bite.

In my experience, up until this point in my young life, whenever I bit into a cookie, the same thing would happen – a piece would be removed from the chomped upon baked good, and it would find its way into my mouth, greeting my waiting taste buds.
However, when I attempted to bite into this unique coffee-cookie, I was met with too much resistance for my young teeth to handle.
I didn’t even make a dent.
But I did make a loud crunch noise when I tried to get at its goodness. The sound of my teeth hitting this concrete-concoction was alarming, and the lack of taste that came along with it was beyond puzzling.
One of the parents must’ve seen me looking bewildered at my desk, or maybe she heard the echoing crunch from my attempted bite, but regardless of her reason to look over at me, she called out, “Hey, did you take my biscotti?”
Well, needless to say, the parents in attendance that day had a mighty big laugh at my expense. They could tell my young palette (and teeth) just weren’t ready for the rigidity of a biscotti. And they were right. It wasn’t until many years later, when coffee became a staple in my everyday routine, that I ultimately warmed up to these tasty coffee-cookies.
While I do think the standard biscotti can be quite enjoyable, I have found a recipe that’ll ensure every bite delivers a strong sense of delicious comfort. And it’s all thanks to cannabis.

Instructions

Okay-dokey. Once you’ve got all those ingredients assembled and ready to go, you can proceed onward with this awesome recipe for THC Biscotti.

  • To kick things off, head on over to your oven, and preheat that bad boy to a steady 350°F. As that oven slowly climbs up to that desired temperature, you should get ahold of some cookie sheets. You can either line them with parchment paper or you could grease them with some butter. It’s completely up to you, as both options work just as well.
  • Now, you’ll want to grab a medium bowl for mixing. In this mixing bowl of yours, you’re going to want to beat together the cannabis-infused cooking oil, anise extract, sugar, and eggs. Keep mixing those together until everything is expertly blended together with one another.
  • At this point, you can start to add in your dry ingredients. Which, in this case, would be your flour and baking powder. Then, you’ll want to stir everything together until the mixture starts to take on a heavy dough consistency.
  • Once you’ve reached that desired dough-like look, separate the mixture into two, equally-sized portions. Take each piece and mold it into a roll-like shape. Make sure they are sharing the same length as your cookie sheet to get the most bang for your buck, as they say.
  • When you’re happy with how each roll looks, place it atop the baking sheet, and press that sucker down until it has about a half-inch in thickness.
  • Then, toss those baking sheets in that preheated oven of yours, and let it cook for 30 minutes. You’ll know these things are done when they start to sport a golden brown hue on their exterior.
  • As soon as that happens, remove them from the oven, and subsequently, from the baking sheet. Place each roll on a wire rack, allowing them to cool down. After a bit of waiting time, the rolls will then be cool enough to pick up. When they are, slice each one into half-inch pieces.
  • These slices should be placed onto the baking sheet, with their “cut side” facing upward. Then you’re going to want to take that sheet, and place it back into the oven for some more baking. This time, keep them in there for 7-10 minutes per side.
  • Once that is all said and done, you should be left with a baking sheet full of toasted, ready-to-be-enjoyed THC Biscotti.
  • So, pour yourself a cup of coffee, light up that morning joint, and dig into these delicious slices of dankness.
