Preheat your oven to 375°F (190°C). Grease a 9x9 inch baking dish and set aside.
In a saucepan, melt the cannabis-infused butter or oil over low heat.
In a mixing bowl, combine the sliced peaches with half of the granulated sugar (1/2 cup) and stir to coat evenly. Spread the peaches in the prepared baking dish.
In the same mixing bowl, whisk together the flour, remaining granulated sugar (1/2 cup), baking powder, and salt.
Gradually add the milk and vanilla extract to the dry ingredients, stirring until a smooth batter forms.
Pour the batter over the peaches in the baking dish, spreading it evenly.
Dot the top of the batter with small pieces of cannabis-infused butter or oil.
Optionally, sprinkle ground cinnamon over the top for added flavor.
Bake in the preheated oven for 35-40 minutes, or until the cobbler topping is golden brown and the peaches are bubbling.
Remove from the oven and let it cool slightly before serving.
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
