Like with most cookie recipes, you’ll want to start off by preheating your oven to a classic 400°.
Then, as that faithful kitchen appliance climbs up to our desired temperature, you will want to use that time to thoroughly coat a nearby baking sheet with some non-stick cooking spray.
Following those quick steps, you’ll want to toss your cannabis-infused butter into a rather tiny saucepan. Place it over “Low-To-Medium” heat, and allow the infused butter to melt completely before moving on.
After that, you’ll need to get your hands on a mixing bowl and an electric mixer. In this bowl, you will want to blend together your sugar and egg whites. I’d say aim to use a “Medium” speed setting, as you don’t want to annihilate the mixture.
After about 30 seconds of that electric mixing of the sugar and egg whites, you can toss in your salt and flour, and keep beating everything together until the ingredients are intricately incorporated with one another.
Once you’ve accomplished that step, you can toss in your melted cannabis-infused butter, along with your almond extract and heavy cream. Again, beat all of those contents together until they are thoroughly blended in with each other.
Now, distribute a tablespoon’s worth of this batter onto half of that previously sprayed baking sheet. After you drop a dollop of the batter onto the baking sheet, use your spoon to form it into a thin circle. I’d say make it roughly 5” or so in dimension.
Do the same thing with another tablespoon of batter on the other half of the baking sheet.
When your oven is ready and raring to go, toss that baking sheet inside to bake for a little under 10 minutes. When the edges of the cookies develop a soft, golden brown, you can remove them from the oven.
As soon as you remove them from the oven, grab a spatula, slide it under one of those cookies, and transport it onto a dish towel.
At this point, you’ll want to strategically fold the cookie. Start by pinching it at the top to create a flimsy half-circle, and place your pointer fingers into the separate ends. Then, as you press the cookie towards the center, the sides will bend, and eventually form the shape of a classic fortune cookie that we all know and love. In my experience, this folding process doesn’t take more than a handful of seconds to complete.
Repeat this folding procedure with the rest of your cookies as quickly as you can. Any hardened cookie, obviously, won’t be as malleable, so the sooner you accomplish those folds, the better off you’ll be. And remember, they don’t have to be perfect, just do your best, and I’m positive they’ll come out looking great!
Now, on thin strips of paper, feel free to write any sort of fortunes that you’d like. They can be goofy, thought-provoking, or just straight-up strange. It’s really up to you, so have fun with it. Then, when you’re done, expertly slide your fortune inside a previously-folded cookie, and voila, that’s it!
