Ingredients

  • 1 teaspoon baking powder

  • 2 large eggs
  • Zest of 1 lemon
  • Zest of 1 orange

  • 1/4 cup plain Greek yogurt or sour cream

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper. Set aside.
  • In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined. Set aside.
  • In another mixing bowl, combine the cannabis-infused olive oil and granulated sugar. Mix well until smooth.
  • Add the eggs to the olive oil and sugar mixture, one at a time, beating well after each addition.
  • Stir in the lemon zest, orange zest, fresh lemon juice, and fresh orange juice until incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fold in the plain Greek yogurt or sour cream until evenly distributed in the batter.
  • Pour the batter into the prepared cake pan and spread it out evenly.
  • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
  • Optional: Prepare the glaze by whisking together the powdered sugar and fresh lemon juice until smooth. Drizzle the glaze over the cooled cake and sprinkle with additional lemon zest, if desired.
