To kick things off with this recipe, you’re going to need to fully preheat your trusty waffle maker.
As that warms up, go ahead and grab a mixing bowl. In it, whisk together your flour, salt, sugar, baking powder, and cornmeal.
Then, in a completely different mixing bowl, whisk together your cannabis-infused butter, egg yolks, and milk. When you’re happy with how that’s looking, you can go ahead and stir those wet ingredients into the dry ingredients.
After that, you’ll want to stir in your cheese.
Upon completing that easy step, grab yet another bowl, and in this one, whisk your egg whites until they stiffen up, but be sure not to dry them out completely. So keep an eye on them during this part of the process.
Once you’ve achieved your desired level of stiffness with your egg whites, fold them into your batter.
When you’ve adequately mixed everything together, you should apply a tablespoon of the batter into each section of the waffle maker, which should be at our desired temperature at this point.
Let it cook in there, per the usual waffle routine, for about 5 minutes, until they develop that classic golden complexion and color.
The moment you see they’re done, remove the waffles and place them on a wire rack to cool down for the time being, as you repeat this process with the rest of your deliciously infused batter.
Then, when you’ve successfully made all of your waffles, you’ll want to apply a generous helping of mayonnaise to half of the pieces. On top of that, you’ll place your tomatoes, bacon, lettuce, and seasonings.
The only thing left to do is top it all off with your other waffle piece, give it a decent “smush” to secure the ingredients, and dig in - you deserve it!
