- 1 lb ground beef or turkey (or plant-based meat alternative)
- 2 tablespoons cannabis-infused olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 packet taco seasoning (or homemade blend)
- 1/2 cup water
- 8 small corn tortillas
- shredded lettuce, diced tomatoes, shredded cheese, avocado slices, sour cream, salsa, cilantro
Heat the cannabis-infused olive oil in a large skillet over medium heat.
Add the diced onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onion is translucent and fragrant.
Add the ground meat to the skillet. Cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes.
Stir in the diced bell pepper and cook for an additional 2-3 minutes until softened.
Add the taco seasoning packet and 1/2 cup of water to the skillet. Stir to combine and let simmer for 2-3 minutes until the sauce thickens and coats the meat.
While the meat mixture simmers, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
Divide the meat mixture evenly among the warmed tortillas. Add your favorite toppings such as shredded lettuce, diced tomatoes, shredded cheese, avocado slices, sour cream, salsa, and cilantro.
