Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced

- 1 teaspoon dried rosemary
- 6 cups chicken broth
- 2 cups cooked chicken, shredded or diced

Instructions
- Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened and fragrant, about 5 minutes.
- Add the vegetables: Add the sliced carrots, celery, and mushrooms to the pot. Cook, stirring occasionally, until the vegetables are slightly softened, about 5 minutes
- Simmer the soup: Stir in the dried thyme and rosemary. Pour in the chicken broth and bring the soup to a simmer. Let it simmer for about 15-20 minutes, or until the vegetables are tender
- Add the chicken: Once the vegetables are tender, add the cooked chicken to the pot. Let the soup simmer for an additional 5 minutes to heat through
