  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 2 large eggs, beaten
  • 3 ripe bananas, mashed
  • 1/4 cup cannabis-infused coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside
  • In a large mixing bowl, combine the all-purpose flour, baking soda, and salt. Stir until well combined
  • In a separate mixing bowl, whisk together the melted butter and brown sugar until smooth
  • Add the beaten eggs, mashed bananas, cannabis-infused coconut oil, vanilla extract, and ground cinnamon to the butter and sugar mixture. Mix until all ingredients are well combined
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix
  • Pour the batter into the prepared loaf pan, spreading it out evenly
  • If desired, sprinkle chopped nuts or chocolate chips on top of the batter for added texture and flavor
  • Place the loaf pan in the preheated oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean
  • Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes
  • Carefully transfer the banana bread to a wire rack to cool completely before slicing and serving

Notes

  • Store any leftover banana bread in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.
