Equipment

  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Non-stick skillet or griddle
  • Spatula
  • Ladle or measuring cup for pouring batter

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted cannabis-infused butter
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped fresh pineapple (or canned pineapple, drained)
  • Extra cannabis-infused butter or regular butter for cooking
  • Maple syrup, for serving

Instructions

  • Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt
  • Mix Wet Ingredients: In another bowl, whisk the milk, egg, melted cannabis-infused butter, and vanilla extract until well combined
  • Combine Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay
  • Add Pineapple: Gently fold the chopped pineapple into the batter
  • Heat the Skillet: Heat a non-stick skillet or griddle over medium heat. Add a small amount of cannabis-infused butter or regular butter to the skillet
  • Cook the Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 2-3 minutes until golden brown and cooked through
  • Serve: Serve the pancakes warm with a pat of butter and a drizzle of maple syrup

Notes

  • Adjust the amount of cannabis-infused butter to match your desired potency and tolerance.
  • For extra flavor, add a pinch of cinnamon or nutmeg to the batter.
  • Store any leftover pancakes in an airtight container in the refrigerator for up to three days. Reheat in a toaster or microwave before serving.
