Marijuana Mango Pie. It has a certain ring to it, wouldn’t you say? It seems like this dish would be on the menu at an island resort, doesn’t it? I mean, if that island had legal marijuana, that is. But, dream-like scenarios aside, the refreshing dankness of this dessert is unrivaled, in my opinion. And it couldn’t be simpler to make.

But, before we get into the nitty gritty details of this recipe, let’s take a gander inside your pantry, to see if you have all the pertinent, essential ingredients needed to adequately pull off this one-of-a-kind dish.

Instructions

  • To get things going with this recipe, you’ll need to first preheat your oven to 350°.
  • Following that quick initial step, combine your confectioners’ sugar and flour in a mixing bowl. After they’ve been adequately mixed together, cut in your cannabis-infused butter using a pastry blender. Keep mixing those elements until the contents start to resemble little rough crumbs.
  • Take those “rough crumbs” and press them into the bottom of a baking dish. Try to use one that is about 9” x 13” in dimension.
  • When your oven hits that desired temperature, toss that baking dish inside to bake for 20-25 minutes. When the crust develops a subtle brown color scheme, you can remove it from the oven, and allow it to cool down completely on the counter.
  • Next, you’ll need to grab another mixing bowl. In it, you will beat together ½ cup of white sugar, cream cheese, and vanilla extract. Use an electric mixer for this part of the process, as you’ll want to keep mixing those elements together until the contents are nice and smooth.
  • When you accomplish that, fold in your whipped topping, and pour all of that over the crust, before you toss that whole thing into the fridge for a half an hour. That should be ample time for your cream cheese filling to chill.
  • At this point, you should grab another bowl, and toss your gelatin inside of it, along with your cold water. Stir both of these ingredients together to the best of your ability.
  • Next, pour your hot water over the gelatin mixture, and stir everything up until the gelatin completely dissolves.
  • When that happens, stir in your salt and the remaining ½ cup of sugar. Again, stir everything up very well, and keep that going until the sugar fully dissolves. Following that, you can add in your lemon juice, and cool everything back down to room temperature.
  • Grab your mango when the gelatin mixture has cooled down, and fold them into your gelatin, before tossing everything into the fridge for 15-20 minutes. Just as it starts to set, you’ll know it’s ready to take out.
  • Lastly, take that newly-created mango gelatin and pour it over your cream cheese filling.
  • Toss that whole thing in the fridge for an hour to fully set. After that, there’s nothing left to do but grab a slice, and enjoy all of the flavors (and potency) that this Marijuana Mango Pie is famous for.
